Spring Water, Artesian Water, Natural Mineral Water: What's the Difference?

Walk into any supermarket and you'll find shelves lined with bottles labelled spring water, artesian water, and natural mineral water. They all look similar. They're all clear. They all claim to be pure. But they are not the same thing and the differences matter more than most people realise.

Here's a plain-English breakdown of what each term actually means, what the regulations require, and how to know what you're really drinking.

Spring Water

Spring water comes from an underground source and flows naturally to the surface, or is extracted at the point where it would naturally emerge. In Australia, spring water must originate from a natural underground source and be collected at the spring or through a borehole tapping the same underground formation.

However, spring water regulations are relatively permissive. Spring water can be treated or otherwise processed, as long as the treatment doesn't fundamentally alter its composition. The mineral content of spring water can also vary significantly depending on the source and season.

Spring water is not required to have a consistent or declared mineral profile. What you see on the label may tell you very little about what's actually in the bottle.

Artesian Water

Artesian water comes from a confined aquifer an underground layer of water-bearing rock that is under natural pressure. When a well is drilled into a confined aquifer, the pressure causes the water to rise in the well, sometimes all the way to the surface without pumping.

The term artesian refers to the source and pressure conditions, not to the quality or mineral content of the water. Artesian water can be high or low in minerals. It can also be treated after extraction.

Artesian sourcing is often associated with depth and purity because confined aquifers are naturally protected from surface contamination by impermeable rock layers above them. This is a genuine advantage. But artesian alone doesn't tell you what's in the water or whether it's been processed.

Natural Mineral Water

Natural mineral water is the most strictly defined and regulated category. In Australia, natural mineral water must meet specific requirements under the Australia New Zealand Food Standards Code. It must originate from a protected underground source. It must be microbiologically safe at the source, not just after treatment. It must have a stable and consistent mineral composition verified by analysis. It can only undergo very limited permitted treatments with no reverse osmosis, no disinfection chemicals, and no fundamental alteration of its natural mineral content.

Crucially, natural mineral water must declare its mineral composition on the label including TDS, calcium, magnesium, sodium, bicarbonate, and other key minerals. This transparency is a legal requirement, not a marketing choice.

Natural mineral water is, in short, the real thing. What comes out of the ground is what goes into the bottle or cask.

Why the Distinction Matters

If you're drinking water purely for hydration, the distinction may seem academic. But if you care about what's actually in your water, its mineral content, its provenance, its consistency, then the category matters enormously.

Processed waters, even those labelled spring or artesian, may have had their mineral content stripped and artificially replaced. You may be drinking reverse osmosis water with minerals added back in, a very different product from water that has naturally acquired its mineral profile over thousands of years underground.
